If they're not, then their income doesn't count. If they are, after the income will count and they will be checked.
You can include them to the application and include their income, or you can not have them on and their income will not help out you get the loan. Wouldn't that be nice if it worked that opening. But it doesn't. They consider both.
Sorry to say, but if you want spouses income considered you will enjoy to have them on mortgage.
